Sunday morning (vegan) french toast


Morning sweets!!
One of the very many reasons I love Sundays.. Breakfast in bed! Today was extra special because I tried out something new. French toast (vegan) with greek yoghurt, fruit and syrup.
What you need
1 ripe banana
3/4 cup almond milk, or milk of choice
1 tbsp of cinnamon  
5 slices of wholewheat/sourdough bread
Soy or coconut yoghurt
Frozen fruit
Agave syrup
What to do
In flat bottom, medium size bowl mash the banana until creamy and fairly smooth. Add the cinnamon and the milk to the mashed banana and stir until combined. 
Quikly dip your slices of bread into the mixture (don’t soak!!) and lay them into a preheated pan, greased with coconut oil. Cook for about 4 minutes (depends on how thick your slices are) on each side. Serve with your soy or coconut yoghurt, frozen fruit and 2 tbsp of agave syrup.

Raw vegan PINK cupcakes


Hi loves,
It is Friday! Almost weekend! And decided to celebrate with these lovely cupcakes. So easy to make and they serve great as a desert.
What you need
Crust
4 tbsp of hemp
4 tbsp of buckini
2 tbsp of goji
2 tbsp of chia
3 tbsp of coconutshreds
3 tbsp of coconutoil
2 tbsp of agave syrup
Topping
½ cup of raspberries
½ cup of cranberries
½ banana
½ cup of almond milk
What to do 
Mix all the ingredients for the crust and scoop the mixture into little cupcake forms and put them in your freezer for 4 hours. After 4 hours, blend all the ingredients for the topping until its thick and creamy and pour this over the crust and freeze again for another 2 hours.
Take the cupcakes out of your freezer, half an hour before serving…
Top with extra fruit and.. enjoy!

Vegan Aioli

Hi sweets! We have this great little place around the corner that serves the most delicious aioli, unfortunately it is not the most healthy one.. So I have been trying to make my own (vegan aioli) for quite a while (note; since july) and it wasn’t until yesterday I was confident enough to post a picture on my instagram.. Luckily a lot of you wanted to try this too so for you lovelies, the recipe!
What you need
½ cup of pine kernels
1 ½ cup of organic silken tofu
6 gloves of garlic
2 tbsp of nutritional yeast
Juice from half a lemon
Salt and pepper to taste
What to do
Place all the ingredients in your food processor and mix until smooth.
This aioli goes well with everything. In the picture I dipped my lemon-garlic oven roasted potatoes in it.
