Sunday morning Vegan Waffles

Hi lovelies!

So sundays are always exciting at our home! Sleeping in and preparing lovely brunches together! After the french toast and pancakes it was time for some vegan waffles. They did not turn out as beautiful as I hoped but they were absolutely delicious!!





















Vegan Waffles
What you need
1 ripe banana
1/2 cup of old fashioned oats
2 cups of whole-wheat flour
2 tsp of baking powder
2 cups of water

What to do
Mash the banana and add the 2 cups of water. Mix together and add the oats, the flour and the baking powder until all the products are combined (leave the little banana lumps in your batter).
Pour the batter onto your waffle iron and cook according to the manufacturer's instructions.

Top your waffles with everything you like, we went for fresh fruit (figs, banana and strawberries) chia, flaxseed and homemade jam!

Mango Orange Soy Parfait

Hi sweets!

A few weeks ago I made this delicious mango orange parfait! Lots of you asked me how to make this on Instagram so I finally the recipe!

Mango Orange Soy Parfait
What you need
1 ripe mango
2 oranges
1 ripe banana
1 can of soy/coconut yoghurt
2 tbsp maca powder
What to do
Mix the mango with the 2 oranges and put into your freezer for 15 minutes until the mixture is cold and has a somewhat harder texture. Take it out of the fridge and pour into your glass as the first layer.
Mix the banana together with the soy yoghurt and the maca powder untill smooth. Pour over the mango mixture.
Create the layers and top with some mint and fresh fruit!
So easy and such a delicious healthy & filling parfait.

Chocolate Raspberry Cupcakes

Hi sweets!

It is almost a week ago since I posted my last recipe.. I've been so busy writing my thesis that I could not find time to update my blog! Luckily I had a few spare minutes today so I am back with some lovely recipes. First one: Chocolate Raspberry Cupcakes

What you need
Cupcake
1 cup of walnuts
1/2 cup of dates
3 tbsp of raw cacao powder/charob powder
1 tsp of vanilla
3 tbsp of melted coconut oil
Frosting
1/2 cashews
1/2 cup of raspberries
1/2 cup or strawberries
4 tbsp of agave syrup
3 tbsp of lemon juice
4 tbsp of melted coconut oil


What to do
Cupcakes
Grind the walnuts in your foodprocessor until you only have crumbs left, do not over process! Add the dates, cacao and vanilla and process until you have a sticky dough, add the melted coconut oil and process briefly. Press the mixture into your cupcake forms and chill in the fridge overnight
Frosting
Combine the cashews, raspberries, the agave syrup and the lemon juice in your food processor until completely smooth, add the coconut oil and process again. Pour into a pan and chill in your fridge overnight.

Spread the frosting over the cupcake and ENJOY!

Raw vegan cheesecake


Hi sweets! 
A few weeks ago I made this delicious two layered cheesecake. For all of you who want to try this.. the recipe!! 
Raw, vegan, blueberry & raspberry cheesecake
What you need
bottom
1 cup soft dates
1/2 cup buckwheat
1/2 cup almonds or walnuts
2 tbsp coconut grater
pinch of salt
1 tbsp date syrup (if the dough is not sticky enough)
filling
1 cup soaked cashews
5 tbsp melted coconut oil
5 tbsp agave syrup
juice of 1 lime
1 tsp vanilla powder
pinch of salt
4 tbsp blueberries
4 tbsp raspberry
What to do:
1. Grease your tin with coconut oil.
2. Mix all ‘bottom’ ingredients in a food processor and press the dough in your tin.
3. Mix in your food processor the cashews, coconut oil, agave syrup, vanilla, salt and lime until smooth. Divide into 2 compartments.
4. Mix half of the stuffing with raspberries and the other half with your blueberries. Wash your food processor in between so the colors do not mix.
5. Spread the filling over the bottom. You can create layers but you can also blend.
6. Put the cake for 1 to 2 hours in the freezer. If you freeze the cake then let it cool off for at least half an hour before serving.

Raw chocolate


Hi loves!! 

For everyone who is craving something sweet today, a wonderful recipe for raw chocolate. Perfect snack with nothing but amazing ingredients and.... this snack is actually good for you!!

Raw chocolate with chia, walnuts and goji berries
What you need
1/2 cup coconut oil
1/2 cup agave nectar or maple syrup
3/4 cup raw cacao powder
1/4 cup shredded coconut
3 tbsp crushed walnuts
3 tbsp goji berries
2 tbsp chia
What to do
Melt the coconut oil. Mix with the cacao powder, agave or maple syrup and coconutshreds.    
Pour the cacao mixture on a flat plate covered with baking paper. Sprinkle with some coconutshreds, walnuts, gojiberries and the chia. Put in the freezer for 2-4 hours and ENJOY!!

Raw chocolate - date - banana - cinnamon smoothie


Morning loves!

Yesterday was a beautiful day because my Mason Jars were delivered. After hearing so much about these on IG I decided to see for myself and ordered 4 different sizes. I totally fell in love with this pint size jar. Perfect for a 1 person smoothie, salad or lunch. I just finished my breakkie when I got them but I had to see how they would look so made myself a second breakfast.

Raw chocolate- date- banana- cinnamon smoothie
What you need
1 frozen banana
1 cup of almondmilk
1 cup of dates
3 tbsp of raw cacao/charob
1 tbsp of cinnamon
What to do
Blend everything together in your mixer. If the consistency is too thick add a bit of milk, if the smoothie is too thin add a few more dates. Top with everything you like, I sprinkled mine with homemade granola (recipe will be up later).

Coconut Date balls

Hi sweets,

I was always looking for snacks on the go, especially before going for a run I was in desperate need for something to boost my energylevel. So i've been experimenting and came up with these date-coconut balls! Super easy to make! 
Store in your freezer and grab when going out the door!


Coconut Date Balls
What you need:
2 cups of dates
1/3 cup of warm water
 3/4 cup old fashioned oats
1 cup coconut flakes
2 tbsp of agave syrup
1/4 cup sunflower seeds
1/4 cup of chopped walnuts
What to do
Combine the dates and warm water in your food processor and mix until you have a smooth consistency. Scoop out the mixture into a bowl and add the remaining ingredients. Once you have the right mix – not to dry, not to soggy.
Take a tbsp of the mix and shape them into little balls. Place into your fridge for about 45 minutes and ENJOY!

Super easy 5 minute breakfast


Hi sweets!
Since I always post my pics on my Instagram account I often forget to upload them on my blog! From now on I will post the recipe directly after I uploaded the picture on IG! Promise!!

Today I was head over heals with my breakkie! So easy, SO YUMMY!! Takes only a few ingredients and 5 minutes of your time. Perfect when you are looking for an filling and healthy breakfast when you are busy in the morning.

What you need:
1/2 cup of old fashioned oats
1 banana
1 apple
1/2 cup of raspberries
4 tbsp of sunflowerseeds
handful of almonds
handful of walnuts
2 heaping tbsp of coconutoil
What to do:
Seriously just toss this all together, pour the
coconutoil on top and place in your oven for 7 min
at 370F. That's it!! ENJOY!!
