I
was always looking for snacks on the go, especially before going for a run I
was in desperate need for something to boost my energylevel. So i've been
experimenting and came up with these date-coconut balls! Super easy to
make!
Store
in your freezer and grab when going out the door!
2 cups of dates
1/3 cup of warm water
3/4 cup old fashioned oats
1 cup coconut flakes
2 tbsp of agave syrup
1/4 cup sunflower seeds
1/4
cup of chopped walnuts
What to do
Combine
the dates and warm water in your food processor and mix until you have a smooth
consistency. Scoop out the mixture into a bowl and add the remaining
ingredients. Once you have the right mix – not to dry, not to soggy.
Take
a tbsp of the mix and shape them into little balls. Place into your fridge for
about 45 minutes and ENJOY!
