Last night my boyfriend was watching football, which isnt really interesting me, so after a polite 5 minutes of oeeh´s and aaaaw´s I sneaked into the kitchen to try out this recipe that I has been on my mind all day -- Crunchy Nutbutter Chocolate Granola! Perfect when you want to spice up your smoothies and soy yoghurt. This is also delicious with cashew milk or almond milk.
Nutbutter Chocolate Granola
What you need
1 cup buckwheat (buckinis)
1 cup of coconut flakes
5 tbsp of raw agave syrup
3 tbsp of nutbutter (I used almond butter)
3 tbsp of carob powder
3 tbsp coconut oil
Handful of mulberries
Directions
Start with preheating your oven to 120 degrees celcius/250 degrees fahrenheit. Melt the coconut oil and mix together with your agave syrup and nutbutter until you have a smooth consistency. Add the buckinis, coconut flakes and carob powder (leave out the mulberries) and swirl until everything is covered with your nutbutter paste. Line a tray with baking paper and pour your mixture onto it. Place the tray into your oven for about 30 minutes. After 30 minutes take out and let it cool. Add the mulberries (puffed quinoa and cacao nibs work wonders too) and ENJOY!

Chocolate Muffins
Morning loves! Hope you all have had an amazing weekend! I know I did because I finally had time to do some baking.. expect some lovely recipes this week! I have been meaning to make some muffins for quite some time. Ever since I visisted Antwerp and had some delicious vegan muffins at this little pastry shop. So this weekend I finally bought a muffin tin and made these delicious and healthy chocolate muffins.They are literally bursting with flavor, perfectly sweet and moist, and have wholesome ingredients like flaxseed, banana, cacao and dates.
Chocolate Muffins
What you need
1 cup buckwheat flour (almond and spelt flour will work too)
1 cup potato starch
3 large ripe bananas
1 cup medjool dates
3/4 cup raw cacao powder
1/2 cup plant based milk (I used almond milk)
2 tbsp baking powder
Directions
Preheat your oven to 395 degrees. In your food processor, blend the bananas, dates and your milk until you have a smooth consistency. In a large bowl, add all the dry ingredients and mix together. Combine the dry ingredients with the wet ingredients and stir. If the batter is still a bit dry you can add a bit more milk.
Scoop the batter into your muffin tin, top with goodies you like (I went for cacao nibs and puffed quinoa), and place into your preheated oven for about 20 minutes until they have a golden crust and aren't moist on the inside. Let the muffins cool for 10 minutes on a cooling rack before serving.

Vegan Buckwheat-Banana Waffles
Morning loves!! Just a quick blog about last weeks vegan waffles (which were absolutely amazing btw!). I posted a recipe before but since a lot of you asked for this recipe I thought I would give this 'updated' waffle recipe another go!

Vegan Buckwheat-Banana Waffles
What you need
1 ripe banana
1/2 cup of old fashioned oats
2 cups of buckwheat flour
2 tsp of baking powder
2 tbsp ground flax
2 cups of water
What to do
Mash your very ripe banana with a fork until you have a nice and thick consistency (I like little lumps in my batter but totally up to you). Mix the oats, buckwheat flour and the baking powder and combine with the banana and water.
Pour the batter onto your waffle iron and cook according to the manufacturer's instructions.

Goji Bites.. an alround snack!
Hi sweets! Today I got an amazing snack for all of you! Goji bites. You have probably heard of the superfood goji but for those who have not, a little bit about this beautiful food:
Health benefits Goji berries
Goji berry, also know as wolfberry is a bright orange-red berry grown in the north, central and western areas of China. As they are easily damaged it is common for them to be dried to preserve. Goji berries have been used in traditional Chinese medicine to manage diabetes, fever, eye problems, blood pressure and fatigue. They can be eaten raw, cooked or dried (they look a lot like raisins) and can be used in herbal teas, juices and medicines. Goji berries benefit your health in many ways: protect your liver, help eyesight, improve fertility, strenghten the legs, boost immune function and improve circulation
The blue-red color found in goji berries as wel as in blueberries, acai berries, cranberries, strawberries and cherries are natural antioxidants which helps protect the body against oxidative damage. They are also rich in Vitamin A which protects the skin from damage, helps maintain vision and benefits the immune system.
Enough reasons to celebrate these little miracles!
Goji bites (glutenfree, refined sugar free).
What you need
5 tbsp gojiberries
5 tbsp buckwheat
5 tbsp hempseed
5 tbsp puffed quinoa
2 tbsp chia
2 tbsp raw honey
3 tbsp coconutoil
What to do
Mix all the ingredients exept the raw honey and coconut oil in a bowl. Melt the coconut oil on low heat and take of directly when totally melted. Pour this over your superfood mixture and add the raw honey. Stir until everything is covered with the honey and coconut oil.
Pour the mixture into your favorite mould and place in your fridge for about 15 minutes. Take out and.. ENJOY!!!

Raw Energy Balls with Beauty Fruits
Morning sweethearts! Hope you are all doing well and enjoying the beautiful new year! I have been really busy working on this blog. I started this a few months ago, having absolutely no idea of how to make this somewhat appealing. Luckily my nephew offered me to help, he is a true genius when it comes to all this technical stuff. So all I have to do now is write write and write... Which I love doing so the new year is off to a wonderful start!
In between writing, editing and taking pictures I have been trying out amazing new recipes. One of which is this delicious Raw Breakfast Energy Ball. After only one I felt satisfied and energized! A true life saviour when you are in a hurry in the morning but still want to fill your body with the absolute best nutrients your body deserves and needs!
I ate them with berries and figs. Berries are my go to fruits whenever I feel my skin is a bit blah. They are my number 1 beautyfoods!
Beautyfoods
Strawberries: These gorgeous berries are rich in AHA's, vitamin C, salicylic acit and flavanoids. Each of these fancy words are known for their healing powers, they clear acne and reduce oil. Strawberries also reduce puffiness and circles beneath your eyes. As if this is not enough, they are antiaging as well because of their high antioxidant content!
Raspberries: These delicious, juice little berries have amazing healing benefits for your skin. The antioxidants packed into these beauties neutralize enznymes that destroy connective tissue in the skin and if this is not enough, antioxidants repair protein in your bloodvessel walls preventing inflammation!
Raspberries contain twice as much antioxidants as a strawberry and three times more than a kiwi.
What you need
Handful of walnuts
Handful of strawberries
Handful of raspberries
4 tbsp buckwheat
1 tbsp agave syrup
2 tbsp chia
2 tbsp raw cacao
2 tbsp goji berries
5 medjool dates
What to do
In your foodprocessor mix the walnuts until you have a rough flour. Add the dates, chia and buckwheat and pulse until everything sticks together. Add the agave syrup and the raw cacao until your mixture has a beautiful brown color. Take the mixture out of your foodprocessor and gently fold in the goji berries. Place in your fridge for about 10 minutes, garnish with your raspberries & strawberries and.. ENJOY!!!

Puffed quinoa energy bites
In my last post I was telling you guys how I am always looking for snacks that can satisfy my sweettooth. So I wanted to post another recipe that I love very much and keeps my cravings at bay!
Puffed Quinoa Energy Bites
What you need
2 cups puffed quinoa
3/4 cup of old fashioned oats
3 tbsp chia seeds
1/4 cup of buckwheat
1/3 cup of agave syrup/raw honey
1/2 cup of melted coconut oil
Cacao coating
1/2 cup raw cacao
1/4 cup coconut oil, melted
What to do
Mix your quinoa, old fashioned oats, chia, buckwheat, honey and coconut oil until thoroughly combined. Pour the mixed ingredients into a mould of your choice (I used a sillicone one - see picture). Place your mould into the freezer for 15 minutes until the mixture has hardened.
In the meantime mix the raw cacao with the (melted) coconut oil and stir until all the lumps are out and you have a smooth texture (it will likely take you a couple of minutes).
Take out the quinoa bites and dip them into the cacao so the bottom of the bite is covered. Place all the bites on a plate and place in your fridge for 30 minutes.

Vegan puff pastry spirals with hazelnut paste and buckwheat
There are times that I am craving something sweet and find it difficult to think of a snack that can satisfy my sweettooth. I found the answer in these super cute vegan puff pastry spirals. I usually make a whole batch which I keep in the fridge.. they only last 4 days because the whole family loves them!
Vegan puff pastry spirals with buckwheat and hazelnut paste
What you need
1 box of frozen vegan puff pastry
3/4 cup of vegan hazelnut paste ( I didnt have time to make this myself so the one I used for this recipe is store bought)
1/2 cup of buckwheat
1/4 cup of coconut flour
1/4 cup of rice milk
What to do
Preheat your oven to 400F
Take 3 sheets of puff pastry out of your fridge and place on a plate until thaw. Spread out the coconut flour and cover the puff pastry sheets until no longer sticky. Smear one side with the hazelnut paste, take 3 tbsp of buckwheat and spread over the hazelnut paste. Roll the sheet and close the endings so the paste cant get out.
Repeat for the other two sheets.
Place in your fridge for 5 minutes (makes the cutting easier). Take the rolls out and cut into even sized spirals.
Place all the spirals on a baking sheet and cover with a bit of rice milk (so they get a golden brown color) once baked.
Place the baking sheet in your oven and bake for 12-15 minutes or until lightly browned. Cool completely on a parchment paper lined wire rack.
Enjoy!!

Perfect Crunchy Granola
I love snacks, I love breakfast and I especially love snacks you can eat for breakfast! Yesterday i posted a picture on Instagram of my granola, strawberry and banana snack that I took with me on a busy day. Lots of you lovely people asked for the recipe so time to post!!
Perfect Crunchy Granola
What you need
2 cups old fashioned oats
1/4 cup buckwheat
5 medjool dates (chopped into little pieces)
2 tbsp chia seeds
4 tbsp gojiberries
1/4 cup of agave syrup
1/2 cup of melted coconut oil
What to do
Preheat your oven to 350 degrees and place the old fashioned oats on a cookie sheet in the middle of the oven. Bake them until they they are lightly toasted (10-15 minutes).
In a large bowl combine the dates, chia, goji, buckwheat and your toasted oats. First add the melted coconut oil and mix until everything is covered. Then add the agave syrup (you can also use raw honey) and stir until the mixture is sticky.
Spread your mixture again on a cookie sheet and bake for 15 minutes, stir every 5 minutes so both sides are crunchy and golden brown.
Take the granola out of your oven and let it cool completely before you break it in even chunks.
Breakfast tip: granola, cashewmilk, fresh blueberries and some ground flaxseed
Snack: granola, strawberries and banana (see the picture)
