Nutbutter energybars

Hi loves,
Today I was scrolling through my Instagram pictures and found an oldy but goody of my nutbutter energy bars! Weirdly enough I never got around to posting the recipe.. I think it was because I forgot to make a decent pic (still haven't got one but I will upload a close up somewhere this week!) These babies are packet with beautiful ingredients and give you that extra whoop whoop when you feel like taking a nap or when you need to perform at your very best and you could use some extra energy!





















Nutbutter energybars
Ingredients:
1 very ripe banana
1 cup spelt oats 
1/2 cup (ground) mixed nuts
1/2 cup medjool dates
1/4 cup desiccated coconut
1/4 cup buckwheat
2 tbsp chiaseeds
2 tbsp nutbutter (I went for almond butter)
2 tbsp coconutoil
2 tbsp cinnamon powder
3 tbsp dried cherries

Directions:
Start by preheating your oven to 280 degrees. While your oven is doing all the hard work, you'll have more than enough time to whip up these yummy bars. In your foodprocessor mix the banana, nutbutter, coconut oil and the dates. Process until you have a nice and smooth mixture.
Add the rest of the ingredients (except the cherries) and pulse until combined. Line a baking tray with baking paper and pour in your energybar mixture, place the cherries on top. Put into your oven for about 20 minutes. Let it cool and cut into individual bars. Perfect to take with you to work or school! Enjoy!!

Banana pancakes with coyo

Hi sweethearts!

I have got another really delicious recipe for to post today! Since a lot of you asked for my banana pancake recipe I have spent the last week perfecting the recipe so I can finally update this on my blog! So weird, the whole time Ive been working on my blog, I haven't posted a simple banana recipe. Shame on me!

A bit over a week ago it was Eastern and I was lucky enough to celebrate this holiday with my boyfriend in Paris. We had the most wonderful time but this meant we missed out on all the holiday festivities with our family and friends. To make up I made these banana pancakes (pretty festive huh?!). I loved the topping of bananas, blueberries and raspberries. We picked them up on boulevard Raspail the day before. Anyone ever been there? It is seriously the most beautiful organic market I have ever seen! I will post some pics to give you guys an impression!




















Banana-coconut pancakes
Ingredients
4 flax eggs
2 bananas
1 cup of old fashioned oats
2 tbsp coyo (coconut yoghurt)
1/2 tsp baking powder
1 tsp cinnamon

Directions
Mix all the ingredients in your blender or food processor until smooth and bake like for about 2 minutes on each side! Top with your favorite fruits and enjoy with your loved ones!

The antioxidants in berries can help your body fight oxidative stress caused by free radicals that can lead to illness. Eating a diet rich in antioxidants can help improve your health, protect your skin and hair, and prevent certain diseases. All fruits and vegetables contain antioxidants, but nutrient-rich berries are some of the absolute best sources.
There are several powerful antioxidants that appear in berries, including anthocyanins, quercetin, and vitamin C. Anthocyanins give berries their vibrant color, reduce inflammation, and may help prevent and manage arthritis. Anthocyanins work together with quercetin to help slow age-related memory-loss. Quercetin can also decrease the inflammatory effects of chemicals in the synovial fluid of the joints for people with inflammatory conditions like rheumatoid arthritis.

Perfect Pink Smoothie Bowl

Hi sweethearts! Hope everyone is doing amazing and looking foward to Valentine!! I know I am! If you are looking for a sweet and pink breakfast to surprise your love with I might have a beautiful recipe for you.. a perfect pink smoothiebowl! Supereasy because you want to spend this day with your sweetheart instead of in the kitchen. 






















Perfect Pink Smoothie Bowl
What you need
2 frozen bananas 
1 banana
1 big scoop of maca powder
handful pomseeds
handful frozen raspberries

What to do
Place the bananas (frozen and not frozen) in your blender and pulse until you have a thick, creamy consistency. Add the pomseeds and raspberries and pulse again until the consistency has a perfect pink shade, add the maca powder and swirl until this is well absorbed. 
Scoop into 2 bowls and top with fruits you love, I went for blueberries, strawberries, pomseeds a big scoop of chia seeds and some coconutshreds.
Serve with LOVE!

Blueberry Coconut Icecream

Hi lovelies! I hope you are all doing well and having a wonderful day. 
I have been craving some vegan icecream for a while now. So when I got home from the farmers market last saturday I immediately started experimenting with all the delicious fruits I bought. This blueberry coconut cream is a real winner!! I just can't get enough of it so I have been eating this as breakfast, snack and dessert for the past few days! LOL! Supereasy, Superfilling, SuperYUMMY!






















Blueberry Coconut Icecream
What you need
1 cup frozen blueberries
2 frozen bananas
1 cup coconut water
5 tbsp coconut flakes

What to do
Mix all the ingredients together in your foodprocessor or blender and pulse until you have this lovely thick and creamy consistency. Scoop into a little bowl and place in your freezer for 10 minutes. This gives you the time to prepare the topping. Think; berries, goji, chia, buckwheat, coconut flakes, hemp, mulberries & cacao nibs.
After 10 minutes take out your icecream and top with all the goodies.

Pink Loving

Hi sweethearts! With Valentines day just around the corner, all my free time goes to coming up with cute and of course delicious pink & red treats to surprise my love with! Yesterday I made
this 3 layered Love smoothie and I think it is truly a winner.. not only do they look supercute but they taste devine! Definitely something to surprise your better half with. I would serve these as either a lunch or as a dessert. Since they are quite filling I could recommend using the 1 serving ingredients for 2 smoothies especially when serving this after dinner.























Pink Loving Smoothie (1 serving)
What you need
Bottom Layer
2 frozen bananas
1 handful of frozen raspberries
1/2 cup of almond milk
Middle
1 tbsp chia seeds
1 heaping tbsp of carob powder
1/2 cup of water
Top Layer
2 frozen bananas
1 handful of frozen blueberries
1/2 cup of almond milk

What to do
Night before serving. Combine the chia seeds with your water in a pint jar. Cover the jar with a lid and give it a shake. Open the jar and add the 3 tbsp of carob powder and swirl until the chia seeds are covered. Cover again and place the mixture in your fridge overnight.

In your blender mix the ingredients of the bottom layer together until you have a nice and thick consistancy.
Pour into your most beautiful glass.
Top the first layer with 2 big tbsp of the chocolate chia pudding.
In your blender mix the ingredients of the top layer together until you have a nice and thick consistancy.
Pour this over the chocolate chia pudding and garnish your smoothie with fruits you love.. I went for pomseeds!

Rawberry tarts

Hi loves!! Hope you all had an amazing weekend!  I did because I finally got to try out these raw berry tarts that were in my head since christmas.. Supercute and supereasy for when you have NO time to bake and you still want to serve your guests something healthy and delicious.






















Rawberry tarts (serves 4)
What you need
1 cup of medjool dates
1/3 cup of almonds
1/3 cup of walnuts
4 tbsp of goji
Handful of your favorite berries
1 tbsp of lemonzest

What to do
Place your dates into the food processor and pulse until you have a smooth consistency. Add the almonds and the walnuts and pulse again until you have a date mixture with chuncks. Take out and gently fold in the goji berries. With your hands, sculpture 4 beds for the berries and place them in your freezer for about 5 minutes. Take out and top with your favorite berries, the lemon zest and some mint!

Raw Energy Balls with Beauty Fruits

Morning sweethearts! Hope you are all doing well and enjoying the beautiful new year! I have been really busy working on this blog. I started this a few months ago, having absolutely no idea of how to make this somewhat appealing. Luckily my nephew offered me to help, he is a true genius when it comes to all this technical stuff. So all I have to do now is write write and write... Which I love doing so the new year is off to a wonderful start!

In between writing, editing and taking pictures I have been trying out amazing new recipes. One of which is this delicious Raw Breakfast Energy Ball. After only one I felt satisfied and energized! A true life saviour when you are in a hurry in the morning but still want to fill your body with the absolute best nutrients your body deserves and needs!
I ate them with berries and figs. Berries are my go to fruits whenever I feel my skin is a bit blah. They are my number 1 beautyfoods!






















Beautyfoods
Strawberries: These gorgeous berries are rich in AHA's, vitamin C, salicylic acit and flavanoids. Each of these fancy words are known for their healing powers, they clear acne and reduce oil. Strawberries also reduce puffiness and circles beneath your eyes. As if this is not enough, they are antiaging as well because of their high antioxidant content!

Raspberries: These delicious, juice little berries have amazing healing benefits for your skin. The antioxidants packed into these beauties neutralize enznymes that destroy connective tissue in the skin and if this is not enough, antioxidants repair protein in your bloodvessel walls preventing inflammation! 
Raspberries contain twice as much antioxidants as a strawberry and three times more than a kiwi. 
Raspberries are also an excellent source of vitamin C – which is great for the absorption of nutrients into your skin.
Raw Energy Balls with Beauty Fruits
What you need
Handful of walnuts
Handful of strawberries
Handful of raspberries
4 tbsp buckwheat
1 tbsp agave syrup
2 tbsp chia
2 tbsp raw cacao
2 tbsp goji berries
5 medjool dates

What to do
In your foodprocessor mix the walnuts until you have a rough flour. Add the dates, chia and buckwheat and pulse until everything sticks together. Add the agave syrup and the raw cacao until your mixture has a beautiful brown color. Take the mixture out of your foodprocessor and gently fold in the goji berries. Place in your fridge for about 10 minutes, garnish with your raspberries & strawberries and.. ENJOY!!!

Fruity cacao bites glazes with agave syrup

Hi sweethearts! First of all... HAPPY newyear! May al your dreams and wishes come true! I hope you have had the most amazing time with family and friends!

Yesterday I posted a picture on instagram of one of my latest addictions raw cacao bites glazed with agave syrup. These were absolutely amazing! I served them multiple times during the holidays and my family could not get enough of them and the best part is.. they are supereasy to make, you only need 5 ingredients (fruits included) AND they contain wonderful ingredients which are actually good for you!























Raw cacao health benefits
- High in antioxidants which protects your cells from toxins and promotes health in many ways.
- Increases serotonin and other neurotransmitters which promotes a positive outlook and makes us feel really good!
- Rich in minerals like magnesium (deficiencies linked to heart desease and diabetes), sulfur (a beauty mineral which helps detoxify your system and promotes healthy skin!!), calcium, iron and copper.

Fruity cacao bites recipe (glutenfree, raw, refined sugar-free).
What you need:
- 1/4 cup of melted coconut oil
- 2/3 cup cacao powder
- 2 tbsp agave syrup (coconut nectar/maple syrup/raw honey) + 4 tbsp for glazing
- Handful of pomegranate seeds
- Handful of blueberries

What to do:
Melt the coconut oil over low heat and remove from the heat as soon as it is melted. Add the raw cacao and whisk until both are completely combined. Spread it out over a baking sheet or pour it into your mould of choice. Add the pomegranate seeds and the blueberries. Pop the moulds into your fridge for 10-15 minutes. Take out the cacao and glaze with your agave syrup. Place it into your fridge again until serving.

Perfect snack, coconut filled with fruit

How to eat a raw, mature coconut
Place the coconut on a flat surface covered by a towel. Hold the coconut so that the soft spots are facing up. Pierce one or more of the soft spots.
Turn the coconut and drain through the pierced holes in a medium sized bowl. 
Place the (drained) coconut in a baking dish and heat it in your oven for 15 minutes at 350 degrees to soften the meat before cracking it open.
Place your coconut again on the towel and tap several times with a hammer, around the shell's midsection until it cracks open.
Fill with your favorite fruit!!

Raw & vegan cashew cream strawberry tarts

A few weeks ago I posted a picture of this delicious raw cashewcream tart on instagram. A lot of you lovely followers left some really sweet reactions and asked me for the recipe. So it is time for me to post! For this tart I used cashewcream which was the first raw and vegan dairy-substitute I used for my desserts. Since there are so many delicious vegan ingredients I kind of forgot about this cream.. Until now!

I will post the recipe for the homemade raw cashewcream later this week.





















Raw & vegan cashew cream strawberry tarts
What you need
1/2 cup of chopped dates
2 tsp of ground almonds
4 tbsp of chopped walnuts
1 cup of raw cashew cream
6 big strawberries

What to do
Mix the dates, ground almonds and chopped walnuts in your food processor until you have a chopped and crumbly mixture. Take the mixture and form 5 balls. Add a bit of water and press the date paste into your tart tins. Fill each tart with a big spoonful of the cashewcream and top with your strawberries 
Place in your fridge for 2 hours before serving.

Perfect Crunchy Granola

I love snacks, I love breakfast and I especially love snacks you can eat for breakfast! Yesterday i posted a picture on Instagram of my granola, strawberry and banana snack that I took with me on a busy day. Lots of you lovely people asked for the recipe so time to post!!



Perfect Crunchy Granola
What you need
2 cups old fashioned oats
1/4 cup buckwheat
5 medjool dates (chopped into little pieces) 
2 tbsp chia seeds
4 tbsp gojiberries
1/4 cup of agave syrup 
1/2 cup of melted coconut oil

What to do
Preheat your oven to 350 degrees and place the old fashioned oats on a cookie sheet in the middle of the oven. Bake them until they they are lightly toasted (10-15 minutes).

In a large bowl combine the dates, chia, goji, buckwheat and your toasted oats. First add the melted coconut oil and mix until everything is covered. Then add the agave syrup (you can also use raw honey) and stir until the mixture is sticky.

Spread your mixture again on a cookie sheet and bake for 15 minutes, stir every 5 minutes so both sides are crunchy and golden brown.

Take the granola out of your oven and let it cool completely before you break it in even chunks.
Breakfast tip: granola, cashewmilk, fresh blueberries and some ground flaxseed
Snack: granola, strawberries and banana (see the picture)
